Oregano
With a pungent aroma reminiscent of pizza, oregano is popular in both Mediterranean and Mexican cuisines. Use it alone or in combination with garlic, chilli, cumin and tomatoes.
An essential ingredient in a bolognaise sauce.
Tuscan Herbs with Lavender
This aromatic blend includes thyme, rosemary, oregano and garlic with the addition of perfumed lavender, a popular combination in French and Italian cuisines.
Stir into risotto towards the end of cooking. Add sliced courgettes and serve with parmesan cheese.
Sprinkle onto pizzas before baking, or sprinkle onto creamy pasta sauces before serving.
Saffron
The most expensive spice in the world, saffron is prized for its aromatic taste and aroma along with the vivid golden yellow colour it imparts to food. Use sparingly, a pinch is enough.
For best results, soak in a little hot water for 10 minutes before use.
Smoked Paprika
This bittersweet paprika has a distinctive smoky flavour which is an essential ingredient in Spanish cuisine but also can be used in everyday cooking to provide a flavour boost.
Mix with crème fraîche and heat for a sauce for pork or chicken.
Mix with a little sour cream for a dip with tortilla chips.
