Chipotle Chillies
One of the few chillies that are smoked after being dried, chipotle chillies are prepared by smoking jalapeno peppers, giving a delicious hot smoky flavour.
Mix with breadcrumbs, grated lemon zest, salt and pepper. Coat fish fillets and pan-fry.
Sprinkle into baked beans before heating for an extra spicy kick.
Coriander Leaf
Use a pinch or a teaspoon to add a fragrant flavour to Thai curries, Indian chutneys, Mexican fajitas and Middle Eastern pilaffs.
Mix with chopped fresh tomatoes, lime juice and a chopped spring onion for a quick tomato salsa.
Add to tomato, carrot or pumpkin soup.
Stir through curries just before serving for extra flavour.
Mexican Style Rub with Cocoa
This spicy rub contains cumin seeds, oregano and chillies along with the addition of cocoa to round out the flavour.
Pep up chilli con carne by adding a tablespoon of the Mexican style rub towards the end of cooking.
Coat fish fillets in the Mexican style rub and oven bake. Serve with a green salad and baked potatoes.
Cumin
Strong and pungent, cumin is used widely in Mexican, Indian and Middle Eastern cuisines.
Add to avocado with a splash of lime juice and some coriander leaf for a quick guacamole.
Sprinkle into mashed potato with a little oregano and chilli for Mexican mash.
