MEXICAN MARINATED STEAK WITH GRILLED SPRING ONIONS

Ingredients
6 garlic cloves, unpeeled
3 tbsp lime juice
2 tbsp Mexican style rub
2 rib-eye steaks
1 tbsp oil
1 small bunch of spring onions, trimmed
1 tsp olive oil
Method
Preheat oven to 200˚C / 400˚F / Gas 6.
Toast the garlic cloves on a tray in the oven for about 6 minutes or until lightly golden. Leave to cool, then peel.
In a small bowl mash together the garlic, lime juice and Mexican rub. Coat the meat all over with the spice mixture and set aside for 20 minutes. Rub a heavy frying pan with the oil and preheat for 3 minutes. Pan-fry steaks for 2 minutes each side (for medium).
Next fry the spring onions in the olive oil for 1 minute. Serve alongside the steak, accompanied by guacamole, tomato salsa and crusty bread.
