Pho Beef Noodle Soup

Pho is one of those meals you can enjoy anytime – and it’s easy to see why. Light in touch, but still deliciously satisfying, this dish is as healthy as it is packed with flavour.

Serves - 4; Preparation - 10mins; Cooking Time - 15mins
Vietnamese Pho Paste

What you’ll need:

1 x Jar Pho Paste

800ml Hot Water

100g Beansprouts

150g Rice Noodles

150g Pak Choi, shredded

1 x Red Pepper, finely sliced

250g Sirloin Steak, fat removed, thinly sliced

4 x Spring Onions, finely sliced

1 x Fresh Red Chilli, sliced into rounds

To Garnish – sprigs of fresh coriander and wedges of lime

How to create it:

  1. Place the jar of paste and water in a pan and boil for 5 mins to create a broth.
  2. Reduce the heat, stir through the beansprouts and noodles and cook for 3 mins.
  3. Add the pak choi and pepper and cook for a further 3 mins.
  4. Add the slices of beef, spring onions and chilli, stir through and serve.
  5. Serve in bowls garnished with sprigs of coriander and a zesty wedge of lime and lose yourself in the flavours.
TRY

For a lighter, fresher alternative try adding thin strips of chicken or prawns with a little freshly chopped mint instead of the beef.

Replacing the meat options with additional vegetables such as sugar snap peas, spinach and mushrooms.
