Pho is one of those meals you can enjoy anytime – and it’s easy to see why. Light in touch, but still deliciously satisfying, this dish is as healthy as it is packed with flavour.
What you’ll need:
1 x Jar Pho Paste
800ml Hot Water
150g Rice Noodles
150g Pak Choi, shredded
1 x Red Pepper, finely sliced
250g Sirloin Steak, fat removed, thinly sliced
4 x Spring Onions, finely sliced
1 x Fresh Red Chilli, sliced into rounds
To Garnish – sprigs of fresh coriander and wedges of lime
For a lighter, fresher alternative try adding thin strips of chicken or prawns with a little freshly chopped mint instead of the beef.
Replacing the meat options with additional vegetables such as sugar snap peas, spinach and mushrooms.
